Chinese New Year Cookies : Golden Pineapple Roll

 We used to buy homemade pineapple tarts when I was working.  We like those buttery and flaky pineapple rolls. It just melt in your mouth when you eat it.
And this year, I made some and the girls just love it...
Ingredients for filling

  • 2 pineapple, about 1600gm, grated
  • 250gm sugar
  • 2 cloves, optional
  • 1/4 tsp cinnamon powder, optional

  • Method

  • Shred pineapples finely and sift drip the juice till dry.
  • Cook pineapple shreds over medium head till dry then add in sugar.
  • Switch to low heat and keep stirring to prevent it from burning until golden brown and dry.
  • Leave to cool.
  • Divide into small parts and form into balls, each weighted  5grams.

    Ingredients for pastry
    147g unsalted butter
    24g icing sugar
    3g salt

    12g Egg yolk

    9g custard powder
    205g Rose flour or all purpose flour
    1 egg yolk ( to brush on top of each unbaked pineapple roll )
    (1) Mix all ingredients in (A) until fluffy.
    (2) Mix in egg yolk gradually, one teaspoon by one teaspoon.
    (3) Sieve all ingredients in (C). Add in and mix well. ( Do not mix too long )
    (4) Divide the dough into 10g and roll it into round shape. You will get about 40 smaller doughs in 10mg.
    (5) Flatten the middle of the dough and insert 5mg pineapple filling. Wrap it and roll it into round shape. Shape it into pineapple shape ( optional ).
    ( I find it more easier to handle the dough in an air-cond room )
    (6) Cut a few lines on top of the unbake dough before bake, then brush it with egg yolk.
    (7) Bake at 160 degree C for about 10- 15 minutes.

    Water colour painting

    After taking their afternoon nap today, the girls and boys started to have their water colour painting session. They painted on the boxes from our new book shelf.

    As there is not enough brushes, I took a ladyfinger from the kitchen, and passed it to MSLS to have some fun.

    HL & ES were busy drawing a smiling sun, wearing a sunglasses, river, grasses and mountains.

    LS wanted to draw an aeroplane.

    While MS wanted to draw a smaller aeroplane, a footprint...

    This is HY's masterpiece.

    Have fun at the beach

    We went to the beach again the day after Christmas. We saw some parachutes when we reached there.
     MS's favourite activity, building sandcastle.

    LS saw a crab on the beach.
    She wanted to rescue the crab.

    Face painting

    ES received an interesting present from HL & HY during her 6th birthday. She wanted to have a face painting last two days, while she was not out for her evening outdoor activities, as she is having stomachache. She requested for a swan on her face, and a flower on her hand.

    MS wanted a micley mouse on her face, and a banana on her hand, haha!

     LS wanted a pussy cat on her face and a balloon on her had. HL drew me an ultraman symbol on a piece of paper and requested me to draw on both hands. While HY wanted to have two snakes on both hands.

    ES is six years old!

    Before ES's birthday, I had a conversation with my " customer " on what type of cakes she intended to have during her birthday party. She told me she wanted a castle cake.....
    As the kids will eat everything appears on the cake stand, I decided not to use fondant as they don'tt really like the taste. I made some flowers using royal icing the day before, and I decorated the cake with swiss meringue buttercream icing which is not as sweet as american buttercream. To make the cake looks like a castle, I use some ice cream cone, mashmallow and lastly watermelon as the doors and windows. Everything is edible, except the two princesses.
    We celebrated ES's birthday on Sunday afternoon. Popo and Gong gong came all the way from Ipoh. Popo brought some birthday pau ( as in the photo ) and ah ma prepared the dishes for lunch.
