Fluffy pancakes

Pancake with strawberries, avocado & blueberries


We added our homemade blueberries jam, prepared by Ah Ma...




It is Indenpendance Day today! A holiday for us.... I had forgotten to take out any bread from the freezer yesterday night. I decided to make something easy and yet fast enough so that everybody can have their breakfast asap.

Still thinking of IHOP blueberries pancake. Therefore, I searched for fluffy pancake from the net and I found this from Allrecipes.com. I like their recipes as we can change the measurement according to the serving that we need.


Ingredients
220 ml milk
155 g all-purpose flour
30 g white sugar
1 1/4 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons white vinegar
4 g salt
1-1/4 egg
35 g butter, melted
25 blueberries

Method

1. Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour".

2. Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone. Pour the blueberries into the mixture.

3. Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
